Mushroom on toast

Food doesn’t need complications to taste great. Some best recipes are created by accident or when you have only few ingredients and you do not fancy going to the shop. I think everyone had mushroom on toast at some point in their life. If you haven’t, you are missing out and you have to try it.

My family in Poland is used to mushroom picking in the forest. Especially my Nan – she know exactly which you can eat. I would be a little more skeptical about my abilities, hence if I am not back home in Poland, I would always buy them in the shop. I usually get wild mushrooms if I can get them, as they have more earthy, deep flavor.

Mushroom of toast

Simple, delicious and never boring.

Servings 1 hungry person

Ingredients

  • 1 tbsp olive oil
  • 1 tsp butter
  • 1 clove garlic chopped
  • 2 spring onions chopped
  • 125 g wild mushrooms sliced
  • 2 stalks fresh thyme leaves only
  • zest from half lemon
  • dash of lemon juice
  • salt and pepper mushrooms love pepper
  • 2 slices crusty sourdough
  • 1 tbsp parsley
  • extra virgin olive oil to drizzle

Instructions

  1. Heat up olive oil and butter in the frying pan on medium. (Olive oil increases the burning temp of butter, so it is good to add it in)

  2. Gently fry garlic and spring onions. Add the mushrooms and make sure not to overcrowd them or they will end up soft rather than browned. It should take you 5 min.

  3. Add thyme, lemon zest and lemon juice. Season well. Mushrooms love black pepper, so I always add that extra bit.

  4. Adjust to taste.

  5. Toast or grill the bread. Spread mushrooms on top, sprinkle with parsley and drizzle with extra virgin olive oil.

  6. Enjoy!
