Quinoa crunch granola

This granola is seriously addictive! I absolutely love roasted pecans with quinoa and buckwheat. Add the cacao and maple syrup and you have perfect topping for yogurt, smoothie bowls or even as a snack on its own!

The instructions below are just a guidance, so use whatever nuts and grains you have at home. The great thing about granola is that you can make it with whatever suits you and it will always tastes nice!

Quinoa crunch granola

This makes one large cookie sheet of granola.

Ingredients

  • 1 cup pecans roughly chopped
  • 1 cup raw quinoa
  • 1 cup raw buckwheat
  • 0.5 cup chia seeds
  • 0.5 cup sunflower seeds
  • 0.5 cup almond flakes
  • 3 tbsp cacao powder
  • 5 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 1 egg white
  • pinch of salt

Instructions

  1. Preheat the oven to 175C. Line a baking tray with the parchment paper.

  2. In the big bowl combine all ingredients and mix really well with the spoon.

  3. Spread on the baking sheet and bake for about 45 min - 1 hour. Make sure to mix the granola every so often. When the granola is done, leave to cool for 30 min or so and store in the jar or airtight container.

Kids will really like it because of the chocolaty taste and great crunch! What’s not to love about this granola?!
