Sweet omelette

I will be honest with you. Life has been very hectic for the past three months. I couldn’t find space or motivation to cook properly and adjust the way I cook to suit just me and my daughter. I missed photography and I missed the creative part of me. But thanks to good friend (yes Ewelina, that’s all thanks to you!) I got a kick in the arse and suddenly I woke up with the energy to do things I really love doing.

This sweet breakfast is like a special treat. A treat for myself. When I was small, we used to have these omelettes for breakfast. It is basically a sponge cake in the frying pan. Perfect breakfast when you need a little bit of a treat 🙂

Sweet omelette

This is simple recipe that always brings me back to my childhood.

Servings 1 hungry person

Ingredients

  • 3 eggs
  • 4.5 tbsp self raising flour
  • 1 tbsp icing sugar plus some for dusting
  • 0.5 tsp vanilla paste
  • 1 handful blueberries – frozen or fresh any type of berry will work well
  • 1 tbsp olive oil for frying

Instructions

  1. Separate the egg whites and yolks. Beat the whites until stiff, but don't worry about it too much, it doesn't have to be totally stiff

  2. Add yolks and gently incorporate them with egg whites

  3. Fold in sifted flour and icing sugar and add vanilla paste.

  4. Heat the oil in the frying pan and preheat the oven with grill option at 200°C

  5. Pour the egg mixture to the frying pan and add blueberries

  6. Fry on medium heat until you see bubbles on top and the bottom is nice and golden

  7. Put the pan under the grill for 2 min – or just until golden on top.

  8. Dust with icing sugar and tuck in.

Recipe Notes

You could serve it with yogurt or even ice – cream for extra indulgent brunch 🙂
