Silesian potato dumplings

Prepare yourself some space on the counter to make these dumplings.

Ingredients

  • 1 kg potatoes
  • 0.25 kg potato flour
  • pinch of salt

Instructions

  1. First you have to cook the potatoes. Mash them and set aside to cool down a bit.

  2. Once the potatoes are not too hot, add the potato flour and salt. Start kneading the dough. It will take you couple of minutes. The dough should be smooth with no visible potato bits.

  3. Form small balls and with your finger make a well in each ball. Set aside until you are ready to boil. They don't have to be perfect :)

  4. In the large pan, bring the water to boil with some salt. Reduce the heat and drop 5-6 dumplings at a time. Carefully stir the water to prevent them from sticking to the bottom. They are ready once they float on the surface.

  5. Repeat until all are cooked. You can keep them in the fridge for 2 days and heat them on the steamer whenever you need but they are the best fresh. If you keep them for later, you might need to brush them with some oil to prevent from sticking to each other.
