This is simple recipe that always brings me back to my childhood.
Separate the egg whites and yolks. Beat the whites until stiff, but don't worry about it too much, it doesn't have to be totally stiff
Add yolks and gently incorporate them with egg whites
Fold in sifted flour and icing sugar and add vanilla paste.
Heat the oil in the frying pan and preheat the oven with grill option at 200°C
Pour the egg mixture to the frying pan and add blueberries
Fry on medium heat until you see bubbles on top and the bottom is nice and golden
Put the pan under the grill for 2 min - or just until golden on top.
Dust with icing sugar and tuck in.
You could serve it with yogurt or even ice - cream for extra indulgent brunch :-)
