School bake sales are on before Halloween. I usually bake something for my daughter’s school. If you are looking to make something that will impress the little ones, try also these strawberry bars. With kids in mind I made these rainbow cookies. They are really easy to make and you can double the ingredients so when you are in need of something sweet and delicious you can bake them quickly. There is nothing like warm cookies and glass of milk…

I want to also mention here, that these cookies are very versatile. Basic dough is a perfect base for whatever you might like to add. The ones I made for school bake had to be with smarties (or m&m’s) and white chocolate. I also made some more (you know… the secret stash for the quiet coffee…) with dried fruit. Both were absolutely indulgent!

Rainbow cookies


Servings 25 cookies

Ingredients

Basic cookie dough

  • 1.25 cup plain flour
  • 3 cups oat flour
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 225 g unsalted butter soft
  • 1 cup caster sugar
  • 1 cup dark brown sugar
  • 1 tsp vanilla essence
  • 3 eggs
  • 200 g white chocolate

Optional

  • m&m's or smarties
  • dried fruit

Instructions

  1. Preheat the oven to 170C and line the cookie sheet with baking paper

  2. In one bowl, mix the plain and oat flour, baking powder and salt. If you don't have the oat flour you can do it by pulsing the oats in the food processor or smoothie maker. 

  3. In another bowl, beat the butter until pale and fluffy. Slowly add both sugars and vanilla essence.

  4. Beat in the eggs one at a time.

  5. Fold in the flour mix and add the white chocolate pieces.

  6. You can add dried fruit if you want.

  7. Spoon 2 tbsp of dough onto baking sheet. Remember that cookies will spread so leave distance between them.

  8. If you want to use the dough later, you can spoon the dough onto cling film and roll it as a sausage. When kept in the fridge for at least 15 min, it will harden and be easier to slice.

  9. Bake for 12-15 min until just set. You might think they are not done yet, but they need to be a little soft. They will harden while cooling later.

  10. When you take the cookies out of the oven, push in the m&m's and leave to cool.

  11. Enjoy still warm with glass of milk.
