This is easy and quick recipe with tons of flavour! It is so fragrant that when I ‘taste’ it, I just have to stop myself from eating the whole batch with bread… It is brilliant with tomato soup or with pasta on its own, or just on the slice of crusty ciabatta. Try it!

Pesto

This is classic pesto, you can adjust ingredients to your liking or play with different herbs and nuts. It is best to use food processor but you might use pestle and mortar.

Prep Time 5 minutes

Ingredients

  • 1 small clove of garlic
  • 1 bunch of fresh basil
  • 1 handful of pine nuts
  • 1 handful of freshly grated Parmesan cheese
  • good quality extra virgin olive oil
  • salt and pepper to taste

Instructions

  1. Blitz the garlic and the basil leaves in the food processor.

  2. Add the pine nuts and the cheese and mix again. slowly pour in the oil while processor is on. The oil should bind the rest of the ingredients but also give it a bit of a runny consistency.

  3. Season with salt and pepper, you might want to add more cheese. Adjust it to your own liking. 

  4. Try not to eat the whole batch in one go 😉

Recipe Notes

You might add some lemon juice or lemon zest if you want it to be a bit fresher but I tend to stick to basics.
