Chocolate Ice cream

Valentines Day is just around the corner. What better way to treat your loved one than with some chocolate dessert? Recently I got the ice cream maker for my KitchenAid and I love it! I just started my adventure down the ice cream route but I have already heard from my Mr that my ice cream is better than his favourite brand 🙂 Success! I think I definitely scored some brownie points with this one!

Chocolate ice cream

So simple, so delicious. It works best if you have ice cream maker though!

Servings 1 litre

Ingredients

  • 1.5 cup milk
  • 150 g dark chocolate
  • 1 pinch of salt
  • 1 tsp vanilla paste
  • 3 egg yolks
  • 1 cup caster sugar
  • 1.5 cup double cream

Instructions

  1. Slowly heat the milk with chocolate until all combined. Add vanilla and pinch of salt. Do not boil. Set aside.

  2. Beat the egg yolks with sugar until light and fluffy. Combine with the milk and chocolate mixture and put back on the heat.

  3. Stirring constantly, bring almost to the boil. You basically are making chocolate custard. Try not to eat it all while making. It will take you anything between 5-8 minutes. You will see when it is ready when it thickens. Set aside. 

  4. Now add the cream and stir well. Set aside to cool down completely.

  5. Churn in the ice cream maker according to the instructions. It took me 20 min in KitchenAid bowl. 

If you don't have the ice cream maker:

  1. Freeze the ice cream mix until it is just hard. Then scoop out and whisk until fluffy and airy (you need electric mixer for it or REALLY strong arms!). Transfer to the container and freeze for the future use!
